- 1 cup unsalted butter, melted
- 1 1/4 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon red gel food coloring
- 2 tablespoons unsweetened cocoa powder
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon white vinegar
- 8 ounces cream cheese, softened
- 1/3 cup powdered sugar
- 1 large egg yolk
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a mini muffin pan or line with paper liners.
- Whisk melted butter and sugar until smooth and glossy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla and red food coloring.
- Sift cocoa powder, flour, and salt, then gently fold into wet ingredients.
- Stir in vinegar carefully without overmixing.
- Beat cream cheese until smooth. Mix in powdered sugar and egg yolk until creamy.
- Fill muffin cavities halfway with batter. Add 1 teaspoon cream cheese filling to center.
- Top with more batter until three-quarters full.
- Lightly swirl with a toothpick if desired.
- Bake 14–18 minutes until edges are set and centers slightly soft.
- Cool 10 minutes in pan, then transfer to wire rack to cool completely.
