Description

Deliciously rich and vibrant red velvet mini muffins filled with a creamy center.


Ingredients

  • 1 cup unsalted butter, melted
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon red gel food coloring
  • 2 tablespoons unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon white vinegar
  • 8 ounces cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 large egg yolk

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a mini muffin pan or line with paper liners.
  2. Whisk melted butter and sugar until smooth and glossy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla and red food coloring.
  4. Sift cocoa powder, flour, and salt, then gently fold into wet ingredients.
  5. Stir in vinegar carefully without overmixing.
  6. Beat cream cheese until smooth. Mix in powdered sugar and egg yolk until creamy.
  7. Fill muffin cavities halfway with batter. Add 1 teaspoon cream cheese filling to center.
  8. Top with more batter until three-quarters full.
  9. Lightly swirl with a toothpick if desired.
  10. Bake 14–18 minutes until edges are set and centers slightly soft.
  11. Cool 10 minutes in pan, then transfer to wire rack to cool completely.
