- 4 small flour tortillas
- 1 cup shredded cheddar cheese
- 2 tsp olive oil (for frying)
- 1/4 cup diced bell peppers (optional)
- 1/4 cup cooked chicken (optional)
Instructions
- Preheat a non-stick skillet over medium heat and add olive oil.
- Place one tortilla in the skillet and sprinkle half the cheese on top. Add any optional fillings if desired.
- Top with a second tortilla and press down gently.
- Cook for 2-3 minutes until golden brown, then carefully flip and cook the other side until crispy and the cheese is melted.
- Remove from heat, let cool slightly, then slice into wedges and serve with salsa or guacamole.

- For a vegetarian option, skip the chicken.
