Description

A hearty and healthy red kidney beans curry, perfect for a comforting meal.


Ingredients

Scale
  • 1 cup dry red kidney beans
  • 4 cups water
  • 1 tbsp. olive oil
  • 1/2 cup onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp. tomato paste
  • 1 tbsp. oregano
  • 1 tsp. cumin powder
  • 1/2 tsp. turmeric powder
  • 1/2 tsp. coriander
  • salt and pepper to taste
  • fresh cilantro to serve

Instructions

  1. Rinse and drain the beans. Pour kidney beans into a medium mixing bowl with an inch of water.
  2. Soak the beans overnight or for 8 hours. Rinse and drain again before cooking.
  3. In a large pot, heat the olive oil and add the onion and garlic cloves. Cook for a couple of minutes or until the onion is translucent.
  4. Add the tomato paste and the rest of the spices and mix well.
  5. Add the beans and 4 cups of fresh water, and bring to a boil. Cook for 45 minutes or until creamy.
  6. Adjust the taste and serve with onion and cilantro.

Notes

  • This dish can be served with rice or bread for a complete meal.
  • For a spicier version, add chili powder or fresh chilies.
