Description
A hearty and healthy red kidney beans curry, perfect for a comforting meal.
Ingredients

- 1 cup dry red kidney beans
- 4 cups water
- 1 tbsp. olive oil
- 1/2 cup onion, chopped
- 2 garlic cloves, minced
- 2 tbsp. tomato paste
- 1 tbsp. oregano
- 1 tsp. cumin powder
- 1/2 tsp. turmeric powder
- 1/2 tsp. coriander
- salt and pepper to taste
- fresh cilantro to serve
Instructions
- Rinse and drain the beans. Pour kidney beans into a medium mixing bowl with an inch of water.
- Soak the beans overnight or for 8 hours. Rinse and drain again before cooking.
- In a large pot, heat the olive oil and add the onion and garlic cloves. Cook for a couple of minutes or until the onion is translucent.
- Add the tomato paste and the rest of the spices and mix well.
- Add the beans and 4 cups of fresh water, and bring to a boil. Cook for 45 minutes or until creamy.
- Adjust the taste and serve with onion and cilantro.
Notes
- This dish can be served with rice or bread for a complete meal.
- For a spicier version, add chili powder or fresh chilies.
