- 8 slices deli corned beef
- 1 cup sauerkraut, drained and squeezed dry
- 4 tablespoons cream cheese, softened
- 2 tablespoons sugar-free Thousand Island dressing
- 1 teaspoon Dijon mustard

- Prepare the filling: In a small bowl, mix the softened cream cheese, Thousand Island dressing, and Dijon mustard until smooth. Fold in the drained sauerkraut. Make sure the sauerkraut is well squeezed—too much moisture can prevent the roll ups from staying crisp. Taste the mixture at this stage and adjust slightly, adding a bit more mustard for extra tang if desired.
- Create the cheese base: Line a baking sheet with parchment paper. Divide the shredded Swiss cheese into small piles (about 1/4 cup each), spacing them apart. Gently flatten each pile into a thin circle. Bake at 375°F (190°C) for 5–7 minutes, or until the cheese is fully melted and the edges turn golden brown. Watch closely—the difference between golden and overdone happens quickly.
- Assemble quickly while warm: Remove the cheese circles from the oven and allow them to cool for about 30–60 seconds. They should still be flexible but no longer bubbling. Place a slice of corned beef on each cheese circle and spoon a small amount of the sauerkraut mixture on top.
