- 1 lb Ground turkey
- 2 cups Sweet potatoes (peeled and diced)
- 1 can Black beans (drained and rinsed)
- 2 tbsp Olive oil (for sautéing)
- 1 medium Onion (finely chopped)
- 2 cloves Garlic (minced)
- 1 medium Bell pepper (diced)
- 1 tsp Cumin
- 1 tbsp Chili powder (adjust to taste)
- to taste Salt & pepper (for seasoning)
Instructions
- Prepare the sweet potatoes by peeling and dicing them into small cubes.
- Sauté the onions in a large skillet over medium heat until they become translucent, about 5 minutes.
- Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, roughly 7-10 minutes.
- Incorporate the diced sweet potatoes, black beans, and spices into the mixture. Stir well and cover, cooking for about 15 minutes until the sweet potatoes are tender.
- Taste and adjust seasoning as needed.
