Description

A hearty and healthy dish made with ground turkey, sweet potatoes, black beans, and spices.


Ingredients

  • 1 lb Ground turkey
  • 2 cups Sweet potatoes (peeled and diced)
  • 1 can Black beans (drained and rinsed)
  • 2 tbsp Olive oil (for sautéing)
  • 1 medium Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 1 medium Bell pepper (diced)
  • 1 tsp Cumin
  • 1 tbsp Chili powder (adjust to taste)
  • to taste Salt & pepper (for seasoning)

Instructions

  1. Prepare the sweet potatoes by peeling and dicing them into small cubes.
  2. Sauté the onions in a large skillet over medium heat until they become translucent, about 5 minutes.
  3. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, roughly 7-10 minutes.
  4. Incorporate the diced sweet potatoes, black beans, and spices into the mixture. Stir well and cover, cooking for about 15 minutes until the sweet potatoes are tender.
  5. Taste and adjust seasoning as needed.
