Description

Delicious and chewy chocolate chip cookies made with einkorn flour.


Ingredients

  • ½ cup unsalted butter (melted)
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg (room temperature)
  • 2 teaspoons vanilla extract
  • 1 ¾ cups einkorn flour
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350℉ and line a baking sheet with parchment paper (do not grease your baking sheet, this causes the cookies to spread more). Set aside.
  2. In a large bowl, add melted butter, brown sugar, and granulated sugar. Stir to combine. Add egg and vanilla extract and stir until incorporated.
  3. In a separate bowl, sift together the einkorn flour, baking soda, and salt. Gradually stir dry ingredients into butter mixture until just combined.
  4. Add chocolate chips and stir until just combined.
  5. Allow dough to rest for 15 minutes to allow einkorn flour to absorb liquids in the dough.
  6. Divide dough into 18 balls (1 tablespoon each) and place 2 inches apart onto prepared baking sheet.
  7. Bake for about 12-14 minutes, or until lightly browned and set across the tops.
  8. Allow to cool for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Using room temperature eggs helps with better incorporation in the batter.
  • Ensure the dough rests to help with the texture of the cookies.
