Description

A delicious and comforting creamy chicken gnocchi soup, perfect for any season!


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 pound chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 2 cups gnocchi
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes. Don’t forget to stir occasionally!
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Toss in the shredded chicken and pour in the chicken broth. Bring the mixture to a gentle simmer.
  5. Once simmering, lower the heat and gradually whisk in the heavy cream.
  6. Add the Italian seasoning, salt, and pepper to taste.
  7. Stir in the gnocchi and let the soup cook for another 5-7 minutes, or until the gnocchi floats to the surface and is tender.
  8. Remove the pot from heat and garnish with fresh parsley. Serve hot and enjoy!

  • This soup is a great way to use leftover chicken.
  • Make sure to check that the chicken broth is Halal.
