- 2 cups cooked chicken, shredded
- 1 cup cottage cheese
- 1 cup shredded cheese
- 1 medium bell pepper, diced
- 1 medium onion, diced
- 2 tablespoons fajita seasoning
- 1 cup corn
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, cottage cheese, diced bell pepper, diced onion, corn, fajita seasoning, garlic powder, salt, and black pepper. Mix until well combined.
- Pour the mixture into a greased casserole dish, spreading it out evenly. Sprinkle the shredded cheese on top.
- Place the dish in the preheated oven and bake for 30–35 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before garnishing with fresh cilantro. Serve hot and enjoy.
Notes
- Feel free to use rotisserie chicken or leftovers for convenience.
- For a lighter version, use low-fat cottage cheese.
