Description

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cottage cheese
  • 1 cup shredded cheese
  • 1 medium bell pepper, diced
  • 1 medium onion, diced
  • 2 tablespoons fajita seasoning
  • 1 cup corn
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cottage cheese, diced bell pepper, diced onion, corn, fajita seasoning, garlic powder, salt, and black pepper. Mix until well combined.
  3. Pour the mixture into a greased casserole dish, spreading it out evenly. Sprinkle the shredded cheese on top.
  4. Place the dish in the preheated oven and bake for 30–35 minutes, or until the cheese is melted and bubbly.
  5. Let it cool for a few minutes before garnishing with fresh cilantro. Serve hot and enjoy.
