Description

Delicious and flavorful beef flank steak wraps with a creamy citrus yogurt sauce.


Ingredients

  • 1 pound beef flank steak (sliced thinly)
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic (minced)
  • 1 teaspoon ginger (grated)
  • 1 tablespoon lime juice
  • 1 cup plain Greek yogurt
  • 1 tablespoon orange juice
  • 1 teaspoon orange zest
  • 1 teaspoon lime zest
  • 1 teaspoon honey
  • 1 pinch salt
  • 4 large whole wheat tortillas
  • 1 cup mixed greens
  • 1 medium cucumber (sliced)
  • 1 medium carrot (shredded)
  • 1 medium avocado (sliced)

Instructions

  1. In a mixing bowl, combine olive oil, soy sauce, honey, garlic, ginger, and lime juice. Add the sliced beef and marinate for at least 15 minutes.
  2. Preheat the grill to medium-high heat. Grill the marinated beef for about 3-4 minutes on each side or until cooked to your desired doneness.
  3. In a bowl, mix together Greek yogurt, orange juice, orange zest, lime zest, honey, and salt until well combined.
  4. On each tortilla, layer mixed greens, grilled beef, cucumber, carrot, and avocado. Drizzle with citrus yogurt sauce and roll tightly to form wraps.
  5. Cut the wraps in half and serve immediately with extra citrus yogurt sauce on the side.
