Ingredients

  • 1 medium green cabbage, chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth or stock
  • 1/2 cup rice or small pasta (optional)
  • 1 tsp paprika
  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs such as dill or parsley (for garnish and flavor)

Instructions

  1. Brown the ground beef or turkey in a large pot over medium heat until fully cooked and no longer pink. Drain any excess fat.
  2. Add the finely chopped onions and minced garlic, cooking until they soften and become fragrant.
  3. Stir in the chopped green cabbage and diced tomatoes. Cook until the cabbage softens slightly, allowing the flavors to combine.
  4. Add the beef broth, paprika, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to a gentle simmer.
  5. Cover and cook for about 20 minutes until the cabbage is tender.
  6. If using rice or small pasta, stir it in during the last 15 minutes of cooking and continue simmering until tender, making the soup heartier.
  7. Taste the soup and adjust seasoning with salt, pepper, and fresh herbs like parsley or dill. Serve hot and enjoy.
