Description
A hearty and flavorful beef and cabbage soup perfect for chilly days.
Ingredients
Scale
- 1 lb ground beef or turkey
- 1 medium green cabbage, chopped
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth or stock
- 1/2 cup rice or small pasta (optional)
- 1 tsp paprika
- Salt, to taste
- Black pepper, to taste
- Fresh herbs such as dill or parsley (for garnish and flavor)
Instructions
- Brown the ground beef or turkey in a large pot over medium heat until fully cooked and no longer pink. Drain any excess fat.
- Add the finely chopped onions and minced garlic, cooking until they soften and become fragrant.
- Stir in the chopped green cabbage and diced tomatoes. Cook until the cabbage softens slightly, allowing the flavors to combine.
- Add the beef broth, paprika, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to a gentle simmer.
- Cover and cook for about 20 minutes until the cabbage is tender.
- If using rice or small pasta, stir it in during the last 15 minutes of cooking and continue simmering until tender, making the soup heartier.
- Taste the soup and adjust seasoning with salt, pepper, and fresh herbs like parsley or dill. Serve hot and enjoy.
