A delicious baked feta pasta dish made with fresh vegetables.
Ingredients

- 200g Pasta (penne or fusilli)
- 200g Feta Cheese
- 2 cups Cherry Tomatoes
- 1 cup Spinach
- 1 Bell Pepper (diced)
- 2 cloves Garlic (minced)
- 2 tablespoons Olive Oil
- Salt and Pepper to taste
- Fresh Basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Add cherry tomatoes, diced bell pepper, and minced garlic in a baking dish.
- Drizzle with olive oil and season with salt and pepper.
- Place the block of feta cheese in the center of the vegetable mix.
- Bake for about 30 minutes until tomatoes are blistered and feta is creamy.
- Meanwhile, cook the pasta according to package instructions until al dente.
- Drain the pasta and add it to the baking dish with the roasted vegetables and feta.
- Stir in the fresh spinach and mix well until combined.
- Garnish with fresh basil and serve hot.
Notes
- Feel free to add more vegetables or spices according to your taste.
- This dish is great as leftovers and can be reheated.
