Description

A delicious baked feta pasta dish made with fresh vegetables.


Ingredients

Scale
  • 200g Pasta (penne or fusilli)
  • 200g Feta Cheese
  • 2 cups Cherry Tomatoes
  • 1 cup Spinach
  • 1 Bell Pepper (diced)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Olive Oil
  • Salt and Pepper to taste
  • Fresh Basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Add cherry tomatoes, diced bell pepper, and minced garlic in a baking dish.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Place the block of feta cheese in the center of the vegetable mix.
  5. Bake for about 30 minutes until tomatoes are blistered and feta is creamy.
  6. Meanwhile, cook the pasta according to package instructions until al dente.
  7. Drain the pasta and add it to the baking dish with the roasted vegetables and feta.
  8. Stir in the fresh spinach and mix well until combined.
  9. Garnish with fresh basil and serve hot.

Notes

  • Feel free to add more vegetables or spices according to your taste.
  • This dish is great as leftovers and can be reheated.
