Description

A healthy and delicious avocado and egg toast recipe, perfect for breakfast or brunch.


Ingredients

Scale
  • 1 medium avocado
  • 3 hard-boiled eggs
  • 2 Tbsp plain greek yogurt
  • 1 large lemon, juiced (about 1 Tbsp)
  • 1 Tbsp dijon mustard
  • ¼ cup fresh parsley, chopped
  • 1 Tbsp fresh dill, chopped
  • 1 shallot, chopped (optional)
  • ½ tsp red pepper flakes
  • salt and black pepper, to taste
  • 1 slice sourdough bread (or your favorite bread)

Instructions

  1. Cut avocado in half and remove the pit. Then scoop out the flesh.
  2. Roughly chop the shallot and hard boiled eggs. Then add everything to a cutting board.
  3. Smash all the ingredients using either a masher, fork or a kitchen knife.
  4. Top a piece of toast with the avocado and egg mixture.
  5. Optional: Add crushed red chili flakes or your favorite toppings.

Notes

  • This recipe can be adjusted to personal taste by adding or removing ingredients.
  • Feel free to use soft-boiled eggs instead of hard-boiled eggs for a creamier texture.
